Jack Daniel's is one of the few whiskey makers that builds its own barrels, and for the Heritage Toasted Barrel the cooperage extended the toasting time and applied only a light char, producing a barrel that deepens the wood's natural sugars rather than the smoky char of a standard barrel.The classic mash of 80% corn, 12% malted barley and 8% rye is charcoal mellowed, entered into these heavily toasted barrels at a lower proof to draw out oak sweetness, and matured at least seven years before bottling as a single barrel at 100 proof, with barrel-to-barrel variation adding character.
