Fully mature Blue Weber agave, grown seven to ten years and hand-harvested, gets cooked a full 18 hours at 100°C, fermented with the house's proprietary yeast, and double distilled combining pot still and column still distillate — then rested in oak for a minimum of one year, the legal threshold for añejo, which deepens color and layers real barrel character over the spirit's floral, herbaceous core. Wine Enthusiast has reviewed it favorably across releases, scoring it as high as 94 points, with another review landing at 89 — a strong showing either way for a bottle at this price. Expect a deep amber pour with cooked agave, vanilla, caramel, and toasted oak on the nose, moving into a rich, viscous palate of butterscotch, dried fruit, baking spice, cocoa, and gentle white pepper, finishing long, warm, and softly sweet.
