Pure Pot Still is Finger Lakes Distilling's American take on Ireland's most distinctive whiskey style. Single pot still Irish whiskey requires a mash of both malted and unmalted barley — a tradition born from an 18th-century tax dodge on malt — and McKenzie follows the template with a genuinely local twist: 80% malted barley, 15% unmalted barley, and 5% oats, all New York-grown, mashed with water from the aquifers around Seneca Lake. Two deliberate departures from the Irish playbook define it. It's double distilled rather than triple, to keep more grain character in the spirit, and it ages a minimum of four years in the distillery's own used McKenzie Bourbon and Rye barrels plus some heavy-char new oak — used casks being exactly how Ireland matures its whiskey, and a rarity in America. Bottled non-chill filtered with no additives at 40% ABV. Expect a pale straw color with freshly baked bread, green apple, honey, chamomile, grass, and a touch of woodshop linseed oil on the nose, opening into a light but surprisingly structured palate of citrus, caramel, wet stone, and nutmeg, finishing long and grainy like lemon marmalade on buttered toast, with a whisper of white pepper.
